Eggs Benedict...and Variations
Eggs Benedict is one of my favorite breakfast dishes...the rich Hollandaise sauce...the fresh eggs...and don't forget the Canadian bacon! But it just isn't the same without those toasted English muffins to soak up the runny yolks. Nowadays, I usually have to make the specialty at home with gf muffins (yet it never quite tastes the same)
On a recent brunch outing, I ordered a variation of my classic go-to. Meet Crab Cakes Benedict, a fresh twist that you've gotta try! This recipe for gf crabcakes makes the perfect base. Simply top with poached eggs, sauce, and grilled onions, and you've got a new fav :)
