Precious Pad Thai
There's something about Thai food that always hits the spot. From delicate summer rolls to heartier curries, a typical Thai menu is filled with a range of flavorful dishes. Before going gluten free, Pad Thai was my stand by. I ordered it so much that the waiter remembered my name (no, that's not something I'm proud of!).
But my favorite Thai specialty is called Pad See Ewe. Imagine a plate of sticky, wide rice noodles stir-fried with veggies and meat...all smothered in sweet soy sauce. Yep, I miss my Pad See Ewe. Maybe it's because I rarely have pasta these days...
Luckily, it's pretty simple to make your own gf version. Evil soy sauce is the main culprit, so eliminating it makes the dish safe. This simple recipe is easy and quick to make - I skip the nuts to make it more like Pad See Ewe. You can also try this variation for a mouthwatering vegetarian Pad Thai meal!
