Lazy Summer Sundays

This summer has given me the rare opportunity to sleep in past 6am, catch up on projects, and experiment with some new recipes. I've been spending my late mornings in the kitchen - whipping up everything from banana chip muffins to Spanish fritattas. But more than anything, I've been searching for an easy dish that's suitable to eat for any meal.

Enter the "breakfast" scramble (I could eat if for breakfast, lunch or dinner!). It's customizable, simple to make, and a wonderful way to use up any leftover veggie or meat ingredients. I've become really open minded about what I add to my scrambles - it's fun to get creative and use whatever you find in your fridge. Who knows, you might even stumble upon a new go-to dish!

Three of my favorite scrambles so far:
*I always begin by adding a bit of olive oil and seasoning to my nonstick pan - it gives the food extra flavor and fragrance

1. Sauteed zucchini, shitake mushrooms, eggs, garlic

2.  Baby spinach, chicken sausage, artichoke hearts, basil

3. Tuscan kale, portabella mushrooms, crumbled feta (served with sweet potato hash)

    1. I can relate, Emma :) Sometimes I just feel like popping something into the microwave! That's why these scrambles are great - you can even make a big batch ahead and store leftovers in the fridge
